Description
[/vc_column_text][vc_column_text]- Allow the pork to come to room temperature.
- Fill the BBQ to the brim with large coals and light them.
- Mix the powders for the dry rub and massage them into the meat.
- Once the coals are lit, close the BBQ and heat it to 120C.
- Regulate the temperature by means of a heat shield and the air supply.
- Now place the pork neck in an oven dish and place on the BBQ.
- Insert the core thermometer.
- When the meat reaches 87C it is done, if necessary let it cook for longer up to 7 hours so that the meat falls apart nicely.
- After 7 hours, remove the meat and let it rest in aluminum foil for 20 minutes.
- Then you can 'pull' the meat using 2 forks.
- Serve the meat on a bun.
- Garnish with BBQ sauce, fried onion, silver onion, and parsley.
