Iberico Secreto

Ingredients:

  • 1 piece Iberico Secreto (250g)
  • 1 tbsp olive oil
  • Pepper (to taste)
  • Coarse sea salt (to taste)

Preparation method:

  1. Allow the Iberico Secreto to come to room temperature.
  2. Light the BBQ and ensure a high temperature (200-220°C).
  3. Rub the meat with olive oil.
  4. Sprinkle the meat generously with coarse sea salt and pepper.
  5. Once the BBQ is hot, place the meat on the grill.
  6. Use a core thermometer and grill the meat to 35°C.
  7. Turn the meat over and continue cooking until 55°C.
  8. Remove the meat from the BBQ and let it rest for 5 minutes.
  9. Cut the meat and serve.
