Ingredients:
- 1 piece Iberico Secreto (250g)
- 1 tbsp olive oil
- Pepper (to taste)
- Coarse sea salt (to taste)
Preparation method:
- Allow the Iberico Secreto to come to room temperature.
- Light the BBQ and ensure a high temperature (200-220°C).
- Rub the meat with olive oil.
- Sprinkle the meat generously with coarse sea salt and pepper.
- Once the BBQ is hot, place the meat on the grill.
- Use a core thermometer and grill the meat to 35°C.
- Turn the meat over and continue cooking until 55°C.
- Remove the meat from the BBQ and let it rest for 5 minutes.
- Cut the meat and serve.
