- Olive oil: 2 tbsp
- Rosemary: 2 sprigs
- Thyme: 2 sprigs
- Parsley: 2 sprigs
- Garlic: 3 cloves
- Dried chili: 1 tbsp
- Salt & Pepper

[/vc_column_text][vc_column_text]Preparation:- Prepare the rub in a mortar and pestle. Combine the rosemary, thyme, parsley, garlic, chili, and olive oil and pound until smooth.
- Season the rack of lamb with salt and pepper.
- Spread the rub over the meat on all sides.
- Let it sit for an hour. This allows the meat to warm up to room temperature.
- Preheat the BBQ to 180°C. Create a heat shield or a hot and cold section by spreading out the coals.
- Place the meat on the cold part of the BBQ so that it can cook indirectly.
- Heat the meat to an internal temperature of 45°C. Then remove it from the barbecue.
- Now preheat the BBQ to 220C.
- Now place the meat on the hot part of the BBQ, directly above the hot coals/fire.
- Sear the meat on both sides for 1.5 minutes per side.
- Now let the meat rest for 10 minutes.
- Cut the rack of lamb into chops.
- Garnish with some salt and pepper.
