  • Rack of lamb: 2 pieces
  • Olive oil: 2 tbsp
  • Rosemary: 2 sprigs
  • Thyme: 2 sprigs
  • Parsley: 2 sprigs
  • Garlic: 3 cloves
  • Dried chili: 1 tbsp
  • Salt & Pepper

Description

[/vc_column_text][vc_column_text]Preparation:
  1. Prepare the rub in a mortar and pestle. Combine the rosemary, thyme, parsley, garlic, chili, and olive oil and pound until smooth.
  2. Season the rack of lamb with salt and pepper.
  3. Spread the rub over the meat on all sides.
  4. Let it sit for an hour. This allows the meat to warm up to room temperature.
  5. Preheat the BBQ to 180°C. Create a heat shield or a hot and cold section by spreading out the coals.
  6. Place the meat on the cold part of the BBQ so that it can cook indirectly.
  7. Heat the meat to an internal temperature of 45°C. Then remove it from the barbecue.
  8. Now preheat the BBQ to 220C.
  9. Now place the meat on the hot part of the BBQ, directly above the hot coals/fire.
  10. Sear the meat on both sides for 1.5 minutes per side.
  11. Now let the meat rest for 10 minutes.
  12. Cut the rack of lamb into chops.
  13. Garnish with some salt and pepper.
  14. Enjoy your meal!
