[/vc_column_text][vc_column_text]Preparation:- Mix the coriander, lime, red onion, red pepper, garlic, cumin seeds & olive oil in the mortar.
- Remove the membrane from the picanha. It can be quite tough.
- Cut the fat layer of the Picanha into thin slices.
- Rub these cuts with coarse sea salt, black pepper and the rub.
- Do the same with the bottom of the Picanha.
- Allow the marinade to soak in while you light the BBQ.
- Place the heat shield.
- Preheat the BBQ to 110C.
- Place the Picanha on the BBQ.
- Insert a core thermometer.
- Cook until 60C.
- Remove the Picanha from the grill and preheat the BBQ to 220C without a heat shield.
- Now grill the Picanha on both sides for 1 min.
- Be careful that the meat does not burn due to the flames that arise during the grilling of the fat layer.
- Let the meat rest for 5 minutes.
- Now you can cut the meat.
