[/vc_column_text][vc_column_text]Vorbereitung:- Koriander, Limette, rote Zwiebel, rote Paprika, Knoblauch, Kreuzkümmelsamen und Olivenöl im Mörser vermischen.
- Entfernen Sie die Membran von der Picanha. Sie kann ziemlich zäh sein.
- Die Fettschicht der Picanha in dünne Scheiben schneiden.
- Reiben Sie diese Schnitte mit grobem Meersalz, schwarzem Pfeffer und der Gewürzmischung ein.
- Machen Sie dasselbe mit der Unterseite des Picanha.
- Lassen Sie die Marinade einwirken, während Sie den Grill anzünden.
- Platzieren Sie den Hitzeschild.
- Heizen Sie den Grill auf 110 °C vor.
- Legen Sie die Picanha auf den Grill.
- Stecken Sie ein Kernthermometer hinein.
- Auf 60 °C kochen.
- Nehmen Sie das Picanha vom Grill und heizen Sie den Grill ohne Hitzeschild auf 220 °C vor.
- Nun das Picanha von beiden Seiten 1 Minute grillen.
- Achten Sie darauf, dass das Fleisch nicht durch die beim Grillen entstehenden Flammen der Fettschicht verbrennt.
- Lassen Sie das Fleisch 5 Minuten ruhen.
- Jetzt können Sie das Fleisch schneiden.
